Production notes
After concrete vatting, the grapes ferment naturally at temperatures of 26-28°C. During the alcoholic fermentation, the lees are pumped over twice a day, and the wine is then stirred. We use very few sulfites in the production of this cuvée, in strict compliance with organic viticulture specifications.
Tasting notes
Intense, fruity nose. In its youth, the nose is fresh with red fruits (raspberry) and a hint of licorice and cut hay. After two or three years' cellaring, strawberry jam and gingerbread dominate, giving way to undergrowth, garrigue and a hint of violets. When young, the wine is fresh and supple on the palate. As it ages, it becomes full-bodied, with a fine finish sustained by aromas of strawberry jam and undergrowth.
