In 1840, Jean Febvre, a barrel cooper from Montbard, founded the Winery that is now Maison Simonnet-Febvre. It was exclusively specialized in the making of sparkling wines using the - Traditional Method -. Today they are the only winery in Chablis that produces Cremant de Bourgogne.
Made from a blend of the right and left bank premiers crus of the Serein river, Chablis Premier Cru 2015 is a well-balanced wine pleasant to drink even when very young. More complex and rich on the palate than Chablis , this Premier Cru expresses notes of white flowers accompanied by a beautiful minerality. Revealing a nice structure in the mouth, it can be enjoyed now or wait for a few years in the cellar.
This cuvée is made from a selection of Chablis Premier Crus on both the right and left banks of the Serein River.
