Product notes
The different plots are vinified separately to optimize the expression of each one, and during pressing, the presses are separated for specific vinification. During alcoholic fermentation, different yeasts are used for greater complexity, and temperatures are adjusted to the target profile. Aging on fine lees then adds volume, finesse, and a nice long finish.
Production notes
The Pouilly Fumé AOC in the Loire Valley is one of the favorite regions for Sauvignon Blanc. Maison Castel works with a partner winemaker whose vineyard is located on high-quality flinty clay soil, revealing the varietal expression of the grape.
Tasting notes
Aromatic, delicately expressing notes of citrus, exotic fruits, and mineral notes on the finish. Beautiful complexity on the palate, combining tension and length.
